My Grandmother’s Pimento Cheese

My grandmother has made homemade pimento cheese for almost every family function for as long as I can remember. A few years ago I decided that I wanted to make it so I asked her for the recipe.  It is a simple recipe but takes a little work because you HAVE TO SHRED THE CHEESE yourself.  It will NOT taste as good if you buy it pre-shredded.  Every time I make it, my hands get tired and I think about how amazing my grandmother is for making it.  I can’t imagine how much pain her arthritic hands are in when she makes it. That is love!

Here is my grandmother’s recipe for Pimento Cheese.  Enjoy!

Ingredients:

  • 2 cups FRESHLY shredded sharp Cheddar cheese
  • 2 cups FRESHLY shredded medium Cheddar cheese
  • 1 (4 ounce) jars diced pimento peppers, drained (You CAN use more if you really like pimentos)
  • 1/2 (16 ounce) jar Mayonnaise
  • salt and pepper to taste

Directions:

In a medium bowl combine cheeses, pimentos, mayonnaise, salt and pepper. Add more or less mayonnaise to achieve desired texture. Mix well.
